We have made it a goal in our family to have a meatless meal at least once a week. Autumn is here which means the temps are dropping, the leaves are falling and its the perfect time to cozy up with the ones you love and watch the leaves fall (or better yet, jump in them).

Autumn also means that squash and pumpkins are in season. I love any recipe that uses anything in the gourd family. One of my favorites to cook with is Butternut Squash. It’s so light yet filling.This is a recipe that the entire family will love. Whats even better is that this meal will be done in about 35 minutes. You Butternut pass this delicious meal up.

Roasted Butternut Squash

Ingredients
2 cups ¼” cubed butternut squash
1 medium red onion
1 tablespoon olive oil
Red peppers flakes (add the amount you want depending on how spicy you want the dish to be)
¼ teaspoon salt

½ cup black beans, rinsed and drained if using canned
Juice from half a lime(if using lime juice its about 1/4 cup)
1 tablespoon honey
1 tablespoon olive oil

4 corn tortillas
2-3 ounces goat cheese

Preheat oven to 425˚.
Roughly dice onion and toss with cubed butternut squash. Combine olive oil, Red pepper flakes, and salt. Add to butternut squash and toss again to coat. Roast for 20-25 minutes or until squash is tender and beginning to brown.

In a bowl, combine black beans, lime juice, honey, and olive oil.

Once squash is done, add to black beans and stir.

Spoon squash and black bean mixture on to corn tortillas and sprinkle with goat cheese.

Place tortillas in the oven and let bake until the goat cheese is browning and the tortillas is crisp, 10-15 minutes.

The smell of the ingredients melting together into perfection makes your mouth water. When the timer goes off you will be ready to sink your teeth into this wonderful confection of smells and taste.

This is dish is great for a family or you could even cook it together with your significant other for cozy date night in. You can even add a glass of wine.
