Today I’m going to show you three easy instant pot recipes that will reduce how much time you’re spending in the kitchen preparing meals for yourself and your family. Let’s get started.

Breakfast – Protein Pancake

I love the idea of being able to sit down with my family and have a wonderful breakfast, but that’s just not my reality. With this recipe, I’m able to mix everything together, put it in the instant pot allowing me to spend more time with Garrison as we get ready to start our day.

Ingredients/Prep:

2 1/2 cups of protein pancake mix
1 1/2 cups of milk
2 tablespoons of sugar
2 eggs

Whisk together
Open your instant pot and spray cooking oil. this will ensure your pancake won’t stick to the pot when it’s finished
Pour in pancake mix
Set pot to manual setting on low for 40 minutes
When the pancake is ready get your spatula and go around the edges of the pot to loosen it so you can take it out
Add a garnish and or syrup of your choosing

Lunch – Buffalo Chicken Lettuce Wraps

Most days my lunch consists of chips or whatever food Garrison has left on his plate. But I can’t survive on that, nor can you survive on whatever you’re nibbling on. You need food guys and with this next recipe, you’re going to get something that’s not only a quick fix but healthy too.

Ingredients/Prep: 

2 chicken breasts
2 cups of chicken broth
1 cup of onion, garlic, clove, celery and buffalo wing sauce

Set pot to meat and put on high for 15 minutes
When the meat is done cooking shred it up.
Get your plate and place your lettuce on it. open it up so you can add the freshly cooked chicken, more celery, carrots, and blue cheese.

Dinner – Chicken Enchiladas with Tostadas

We’ve done breakfast and lunch, now it’s time to make dinner. We’re going to make some fun that the whole family can help with.

Ingredients/Prep:

Preheat instant pot on saute which is a medium heat
chicken (season with your preferred seasonings)
1 tablespoon of canola oil
4 boneless chicken breasts
sear on both sides for about a minute. when done remove from pot.
add 1/2 cup of onion. cook until translucent
3 garlic cloves. cook for a few seconds
put the chicken back in the pot
1 1/2 cups green enchilada sauce
1 cup of black beans
1/2 cup of corn

change the pot setting pressure on high for 10 minutes
shred chicken
when done add 1 cup of non-fat Greek yogurt
get a plate and add your tostadas, put the chicken on top, add shredded cheese, diced tomato, and lettuce. Make as many layers as you would like.
